Vesper opened in 2022 near the École Militaire, in the 7th arrondissement, the third address of Fitz Group, launched in 2016 by Guillaume Benard after hotel training in Switzerland. The decor is by Lázaro Rosa Violán, the Barcelona architect: House of Hackney wallpapers, glittering chandeliers, velvet banquettes, jungle greenery, an atmosphere somewhere between London and Tokyo. In the kitchen, a contemporary Japanese spirit: handroll sushi, wagyu grilled on robata, marinated fish, Sunday brunch with Bénédicte Tokyo-Paris. At the bar, signature cocktails with Japanese ingredients, yuzu, matcha, shiso, umeshu. A sunlit terrace, dinner service 7 days a week until 2 a.m.
