At 47 rue Richer, in the 9th arrondissement, Bien Élevé sets the tone before you even open the menu. Here, meat takes center stage, but the house cares just as much about how it was raised as how it will be cooked. To build their network, the team spent months traveling through the French terroirs, meeting producers and tasting their craft, with a clear preference for short supply chains and traceability.
The menu carries this philosophy right down to the names: meats from Châteauneuf, poultry from Licques, Noir de Bigorre pork, alongside wild-caught fish and cheeses from Fromagerie Beaufils. Depending on the day's delivery, the "Bien Élevé cut of the day" sits alongside Angus beef tartare, duck breast, or a grilled bacon burger—accompanied by the ultimate touch, beef-dripping fries. The house makes it a point of honor that every product on the menu is grown or raised in France.
