Meet at Chez Carrie, 14 rue Léopold-Bellan. Behind Carrie is Carrie Solomon, an American in Paris for over twenty years, who has imagined a kitchen bridging California and the Mediterranean. She is joined by Dawnie Perry, a barista-chef from Los Angeles. Together, they curate a plant-forward table where fermentations take center stage, and animal proteins serve more as accents than main attractions.
The address is Parisian, but the pantry travels: vegetables from the Ferme de l'Envol in Essonne, sourdough bread and coffee from Ten Belles, Breton butter from Borniambuc, spices from Nomie, and olive oil from Kaia. On the bottle side, Jill Cousin, co-founder of Provisions in Marseille, has curated a list of natural wines with a special emphasis on female winemakers.
