Moko Hirayama left a career as a lawyer in New York to discover French gastronomy. No restaurant wanted to hire her, until a Michelin-starred chef gave her a chance. With her husband Omar Koreitem, formerly at Sergent Recruteur, they opened Mokonuts in 2015 on rue Saint-Bernard in the 11th arrondissement, a tiny canteen behind a raw-wood counter, with Levantine influences. The cookies come out of the oven practically to order, warm, soft, in tahini, miso-sesame, and Cambodian black pepper versions. An address the size of a living room. A waiting list as long as the street.
