Casa Pregonda takes its name from Cala Pregonda, a wild beach in northern Menorca, with turquoise waters and red rocks. It is the escape promised by Alexandre Giesbert, founder of Daroco, Danico and Roco, who makes his first foray here into Balearic cuisine. With Jonas Ayache on the floor and the heavyweights of PR, Valentine Dubois and Nicolas Hoyet, in artistic direction, the project is Parisian in conception and Menorcan in soul. The decor says it all: white-tiled counter, exposed beams, slender chandeliers, green shutters, large wooden tables. The menu is Iberian and briny, canonical gildas, Padrón peppers, Iberian ham croquetas, patatas tortilla, black rice in the style of Soulages with carabineros, langoustine caldereta. To drink: Cava sangria, tinto de verano, Balearic wines.
