Spring Court’s factory made shoes in Belleville from 1870 to 1984. Since then, the cobbled courtyard has become a creative incubator, and the former workers’ canteen has turned into one of the 11th arrondissement’s most discreet and coveted restaurants. At the helm is Alice Arnoux, who has passed through La Marine by Alexandre Couillon (3 stars), Noma by René Redzepi in Copenhagen, and Le Perchoir. A bistro-Nordic lineage that shows on the plate: fresh produce, a short menu that changes every week, two starters, two main courses, two desserts. Four-course tasting menu in the evening.
